In one of my recent posts I mentioned that I had quit sugar with the help of this book. As I mentioned in that post I absolutely love this cookbook! So far everything I’ve made from it has turned out great and there’s still SO much more for me to get through!
The cookbook is actually divided into sections.
- Breakfast Ideas.
- Smoothies.
- Sweet Stuff.
- Savoury Snacks.
- Sweet Treats.
- Green + Clean Meals.
- Sugar-Free Kids.
- Sauces.
- A Final Cup of Tea.
Each section has a myriad of recipes and on top of this there are handy tips and tricks throughout the book for sugar-free eating.
So yesterday I decided to make one of the recipes out of the ‘Savoury Snacks’ section and made the ‘Totally Nutty Parsnip Fries’ which involves parsnip and almond butter and came out DELICIOUS!
Almond Butter Parsnip Fries
From Sarah Wilson’s I Quit Sugar Cookbook.
Ingredients:
- 3 parsnips.
- 3 tablespoons nut butter. (I used unsalted & unsweetened almond butter)
- 1 tablespoon olive oil.
- Salt, to taste.
Method:
Preheat your oven to 200C/390F and line a baking sheet with parchment paper or foil.
Take your parsnips and peel them.
Then cut into fry shaped strips and place in a large bowl.
Add in your nut butter, olive oil and salt.
Mix everything together using your hands. Yes this bit feels quite gooey and messy but it’s the easiest way to mix everything together!
As you can see the bowl looks like a big mess but don’t worry all will be well! Spread the fries onto your prepared baking sheet then bake for 45 minutes or until crisp.

Hi Mary thanks for the comment! Been a while since I made my own nut butter, try to stay away from them since they’re so moreish! Come to think of it I haven’t used parsnips for ages either! I didn’t realise that about the US 🙂

Hi Naz! Let me know how your almond butter experiments go, OK? Thanks for the link! I’ve just revised my post on almond butter in the Vitamix with a new photo and slightly refined instructions. I’ve gotten so much feedback from readers on this one, it’s been great! Oh, and the parsnip almond butter fries look great. Parsnips are so underused in the US compared to Britain!
Glad you enjoyed! And yes Sarah’s book is great 🙂

Thanks for spreading the homemade nut butter love, and the fries sound wonderful. I love parsnips but never think to buy them. I bet my kids would love these fries, and so I’m adding them to my grocery list right now. Oh, and Sarah Wilson’s book sounds great – right up my alley. Thanks for sharing.
Yayyyy glad you enjoyed 🙂
I had these over the weekend…and they were truly great!! So glad you shared!
Thank you so much! 🙂
Thank you 🙂
Loved the recipe!!! I love your healthy way of cooking!!!
Not a problem! I’m no parsnip expert… I don’t eat them very often but this recipe is definitely great 🙂
I can’t really describe the taste of parsnips but they have a bit of sweetness to them, kind of like carrots. Another great recipe to try if you use things like maple syrup is to roast parsnips with maple syrup on top. The Almond butter one that I’ve posted is more on the savoury side rather than sweet.
As for sweet potato fries I make them all the time. If I want to make them savoury I use spices like ras el hanout spice mix but if I want to make them sweet I usually use cinnamon and brush with some ghee/coconut oil before baking.

I’m fascinated by these. I’ve been wanting parsnips (which honestly is weird for me) but wasn’t sure what I’d do with them. This looks like a great place to start. Thanks for sharing!

Looks cool, don’t know if I would like it since I have never tried parsnip before. I really want to try paleo sweet potato fries.
