This post is coming to you from the past 😉 It’s midday Sunday here and even though I don’t usually write posts on weekends I was in the mood to write one today. That and the fact that as of tomorrow our place is going to have no furniture in it! Yep… tomorrow they’re coming to take all our furniture to ship it over to the UK, it’s officially official!!!
I have no idea how we’re going to get by without any furniture for the next 10 days but somehow we’re going to have to make it work. I’ll be writing blog posts sitting on the floor of our bedroom 😐 Oh and no TV either which means we’ll be watching stuff on the laptop. Hmmmm this should be interesting!
On another note I have made a return back to the gym. As you know after I had my accident it was hard for me to move around and once I started to feel better I wanted to re start my exercise on a lighter note so I started walking outside again. Anyway in the last couple of days I’ve started back at the gym again since I finally feel like I can move around like normal again.
Plus it helps when you have brand new shoes to wear! I LOVE LOVE LOVEEEE Merrell shoes! Actually Joe and I both love them they are extremely comfortable and we have been doing the whole barefoot shoes thing for a while now so are used to wearing them. I can’t do regular trainers/runners anymore. If you’re considering getting barefoot shoes then I really recommend Merrells.
I’m thinking of getting another pair before we go, they’ve just come out with a newer version of these one’s above and I’m thinking they’ll come in handy just for casual everyday walking.
Anyway even though I had a recipe I made for dinner the other night ready to share with you I thought I’d change things up a little and post a quick recipe for an iced coffee that I made this morning… even though it’s FREEZING outside! And don’t worry I’ll post the dinner recipe soon!
The inspiration behind this recipe comes from The Merrymaker Sisters who posted the original version of this recipe on their Instagram page… as soon as I saw it I knew I wanted to make it but changed it up a little according to what I had on hand at home. It’s a great little pick me up for a Sunday morning 🙂
Paleo Iced Coffee
Ingredients:
- 1/2 cup cold brewed coffee.*
- 2 cups unsweetened almond milk (preferably home-made).
- 1 Tbsp raw honey.
- 1 Tbsp coconut butter.
- 1 tsp cinnamon + more for dusting on top.
- 1 tsp pure vanilla extract.
- Handful of ice cubes.
Method:
Place all ingredients into a blender and blend away! Drink up and enjoy!
* To make my cold brew coffee I grind fresh coffee beans to make 1 cup of coarse ground coffee (I like to grind my beans just before I use them). I then pour the coarse ground coffee into an 8 cup french press and pour cold filtered water on top and leave about a 2cm/1inch space at the top. I put on the lid and let it sit for 24 hours and then plunge to filter the coffee grounds. Then I store it in mason jars in the fridge to use for such drink ideas or mainly for my bulletproof coffee.**
** For my bulletproof coffee I use a 1:3 ratio of cold brewed coffee to hot water. I pour both into my vitamix along with 1 TBS of coconut butter/coconut oil, sometimes I’ll also add in a TBS of ghee or unsalted butter. Then I’ll blend it all up and end up with a delicious coffee with a nice froth on top!

Better than the hard floor, I suppose!
Unfortunately no bed! Just two ancient air beds that our landlord brought over… Not very comfy so we ended up on the floor last night 😐 not the best nights sleep I’ve had! Our apartment looks so bare! It’s crazy!

Do you at least have your bed to sleep in, or are you camping out on the floor in sleeping bags?!
