If you looked outside our living room window right now you would think it was the middle of Winter and not the beginning of Spring! There is snow EVERYWHERE and it has been FREEZING for the past few days! According to The Daily Mail this is the coldest March since 1963!
Apparently last year at this time temperatures reached to 22C/71F which is not even HOT, especially to an Aussie who is used to temperatures of 30+C/86+F… but I’ll tell you what that 22C sounds PERFECT right now! In fact anything over 10C/50F would make me happy right now… a statement I would have NEVER made back in Australia.
Since the weather’s been like this I haven’t really felt like doing much other than staying inside and keeping warm! Luckily The Healthy Life Summit is on, so I spent most of Sunday listening to the first day of podcasts and I’m currently listening to the second day of talks while typing out this blog post. So far the talks have been excellent! Who else has been listening?
Uhhhh well enough about the weather, it’s unfortunately one of those things that you can’t control but hopefully the sun will come out to play soon (fingers crossed).
Anyway so I promised on my Facebook Page (yes I FINALLY have a Facebook Page which you can find here) that I would share a crumble recipe with you. I made this recipe after I made my pear upside down cake… which has been proven to be quiet a popular post, plus one of my readers Cyndi over from Healthy A-Z even made the cake over the weekend! It’s always a fantastic feeling when someone makes one of your recipes and enjoys it 🙂
After I made that cake I had two pears left over and some almond flour, so I decided to do something with the two and came up with a quick and easy crumble recipe… I wasn’t even sure that I was going to do a post on it since I really just threw it together, but after eating it I thought why not!
So here it is…
Paleo Pear Crumble
Ingredients:
- 1-2 large pears.
- 2 cups almond flour.
- 1/3 cup coconut oil (melted).
- 2-3 Tbsp raw honey (I found the pears were sweet enough so didn’t need too much honey).
- 1 tsp vanilla extract.
- 2 tsp cinnamon.
- 1 tsp cardamom.
- Pinch sea salt.
- Sliced almonds/coconut flakes (optional).
Method:
Preheat oven to 175C/350F.
Line a square cake pan with parchment paper.
In a medium-large mixing bowl add in your almond flour. Then add in your cinnamon, cardamom and sea salt. Mix together.
In another mixing bowl add in your coconut oil, honey and vanilla extract and mix those together.
Pour your coconut oil mixture into the almond flour mixture and stir together to combine. You should end up with a clumpy mixture.
Peel and slice your pears and arrange on the bottom of your cake pan. Then using your hands (your best kitchen tools) crumble the almond flour mixture on top of the pears.
If you’re using any additional toppings like flaked almonds/coconut flakes add those on top now.
Cover the top with some foil and bake for about 30-35 minutes. Remove the foil and bake for a further 10-12 minutes until the top browns and crisps.*
Enjoy it warm!
*Since I wasn’t sure if I was going to post this recipe I estimated the time it took to bake the crumble… check on yours after 30 minutes and if it’s still a bit too wet give it another 5-10 minutes with the foil on top.
On a final note this will be my last dessert/treat/sweet (whatever you want to call it) recipe for a while. I will explain why in an upcoming post.
