“Can I please have an egg white sandwich with a soy latte to go please?”…. that was me previous to my paleo/real food days. I thought I was being “good” by ordering low-fat, skinny caffeinated drinks from the local cafes I frequented, ordering a soy based coffee was like the ultimate “hey look at me and how healthy I am” and eating an egg white anything was the cherry on top!
Today? Today I cook with REAL butter (grass-fed of course!), I eat bacon and fatty cuts of meat (meat raised in its natural environment), I eat coconut oil by the spoonful and I slather my vegetables with grass-fed ghee (or butter!) and as for those eggs… I eat the whole DAMN thing! Why? Because egg yolks are delicious and not only that but they’re GOOD for you!
Did eating all this fat make me fat? Nope. Did it make me keel over and die because of those ‘arterycloggingsaturatedfats’? Again nope because then I wouldn’t be sitting here typing this blog post, although if that whole saturated fat and killing you thing was true I’d rather go out having eaten a grass-fed steak with a side of veggies slathered in butter than a soy latte and an egg white omelette.
So what did happen? I’ll tell you what happened… My brain felt happier, I wasn’t fighting to keep my eyes open at 2pm, I wasn’t running to the fridge or pantry every 2 minutes because I NEEDED to eat and I wasn’t waking up in the morning feeling like I was literally going to faint until I ate, which actually did happen a few times. That fat… that so-called ‘arterycloggingsaturated’ fat actually made me healthy and gave me my vitality back. Yep… I just put healthy and fat in the same sentence… how do ya like that!
That’s where Liz’s book ‘Eat The Yolks’ comes in. If you are the person I was 5 years ago (the low-fat/soy milk, egg white ordering Naz) then this book is for you… even if you’re not this book is still for you because even for me, someone who has been part of this real food movement for around 3 years now I found that even though I knew about a lot of things written in this book, I didn’t know some of the WHYS behind those things and exactly where and how they originated from. Reading this book has made me feel a lot more knowledgeable about nutrition and health in general and is something I can refer back to if I need clarification on something or if someone else needs my guidance.
One of the things I love about ‘Eat The Yolks’ is that, Liz Wolfe, who most of us in the paleo/primal community know as the creator of Cave Girl Eats, now known as Real Food Liz and one half of the Balanced Bites Podcast hosts hasn’t gone into writing this book with a bias and end goal to try and sway the reader into how she thinks we all should eat and be healthy, like some other health book authors in the past have done. What she has done is to use her knowledge and expertise as a Natural Therapy Practitioner to explain in a clear to read and understand way, how we got to where we are today in terms of health and a lack of understanding of nutrition based on outdated, poor science and the biases of certain authorities that ended up shaping our thoughts about what health should look like. Not only has she managed to write a non-biased, easy to read and understand book about nutrition but she has also made it fun like only Liz Wolfe can! A fan of pop culture references? This book is definitely for you! It takes a clever and witty mind to be able to write about health and a reference to ‘Honey, I Shrunk the kids’ in the same sentence without losing credibility in the words.
There are four chapters in the book (not including an introduction and conclusion), the first chapter deals with ‘Fat’ because that’s what most people who grew up in the ‘low-fat’ era tend to fear the most. Just the word itself can conjure up so many negative images for people because of all that we have been led to believe about it, not to mention cholesterol which Liz also discusses in this chapter. We’ve been led to believe that fat, especially saturated fat will inevitably lead to high cholesterol and then to death, all due to a few biased and poorly constructed studies, starting with a researcher feeding rabbits (who by the way are herbivores and not intended by nature to eat food like meat and eggs) cholesterol and well wouldn’t you know it but they developed damage to their arteries and when Ancel Keys (known as the father of the cholestrol-heart disease hypothesis) came up with his biased study the fate of saturated fat was sealed.
The next three chapters of ‘Eat The Yolks’ deal with ‘Protein, ‘Carbs’ and ‘Nutrients’. In each chapter Liz goes on to explain in a detailed but easy to understand manner what all of these mean to the human body and how to view them in a healthy manner. My favourite chapter is probably the one on ‘Protein’ where she discusses vegetarianism/veganism and why eating meat doesn’t have to mean animal cruelty and dispels some of the more commonly relayed myths about eating meat such as animal protein causes cancer, animal protein is bad for your kidneys, liver and bones and that we can get all the protein we need from plants.
I’m not going to give away too much more about the book but I will say that I feel strongly about the fact that this book is one that everyone should read. Fat is OK, butter,eggs and bacon grease are wonderful and processed foods are sooooooooooooo bad for you. I would have fed my children more fresh single ingredient foods.

Just remember that working out more is not always (usually) the answer. A good diet based on real foods is the most important and training smart, not more.

Last week I was having lunch with a friend and he carved the yolk out of his egg and was about to throw it away. I didn’t let him and had the yolk myself, saying to him that the cholesterol that will make him sick is the one his body produces, not the little bit in the poor and yummy yolk. He was still not convinced and I had the treat of his yolk. LOL.
