Chestnut & Sweet Potato ‘Pasta’

The time is officially here! Tomorrow is the day we finally fly out on our way back home to Oz! Even as I sit here typing this, and even though suitcases are packed and last minute stuff is being done before we leave it still doesn’t seem real… I don’t think it will seem real until we get off the plane in Melbourne and see our families, and even then it will probably take time to properly digest the fact that we’re there.

So you may have realised that I’m actually getting in a bit early with sharing this recipe, if you follow my page on Facebook and actually get to see my posts there, because we all know how much Facebook likes to share posts on pages with everyone (insert sarcastic emoji here!), you may have seen that I said due to leaving for holidays I will only be posting 2x week from now on, and doing a Monday + Friday thing. Well life happens, and I haven’t had a chance to develop as many recipes as I’d like to over this time so… I’m most likely just going to be sharing one post a week (sometimes two) while I’m away and getting back to normal scheduling when I get back. So apologies for that, but I guess that’s how life goes sometimes 🙂 [Read more…]

Today makes it officially one month since we moved to England…as each year goes by I feel like time just flies by quicker and quicker! Anyone else feel that way?

Up until today the weather has been pretty good, it rained for about 4-5 days when we first got here but then the rain stopped and the sun came out (a little) and today the rain came back, although luckily it’s stopped now. Gotta love the English weather 😉

Anyway Joe and I have been continuing our nightly ritual of going walking and it’s a completely different experience to when we were in Michigan. Over there when we walked we would hardly ever come across anyone else, maybe a couple of people in a week. Over here there are people out and about every night…most are running, some cycle (people bike a lot here even just for daily commutes) and some walk like us, although a lot of them are just walking to the local pub 😉 [Read more…]

A Trip Down Memory Lane

Dear lovely readers of this blog, this is going to be my last post for now until we move over and get settled in England. In 5 days time we will be boarding a plane on our way to ANOTHER new country and new life… so with that in mind I thought it would be appropriate to take a trip down memory lane, or at least the past two years for this post.

At the beginning of 2011 Joe and I found out that he had been offered a job here in Michigan, mind you he had applied for this position and had a phone interview a a few months before this but we never heard anything back, so it was kind of just forgotten about. At the time a lot of people where he worked were moving around as well (now most of the people in his old team are working else where too) and he we were ready for something different. So when he got the call to say he’d been offered the position we decided to take it.
