Parsnip Fries – Two-Ways

I made this recipe when we were still in England and the weather was starting to get quite cold! Root vegetables being in season back there, I decided to make these parsnip fries one day! Parsnips are one of those vegetables which I feel are quiet underused… or maybe that’s just me?

In any case this root vegetable is quite tasty and can be served up in so many ways. For e.g. check out what my friend Alisa created with her parsnips recently (YUM!). I decided to go for fries/chips (I use these two terms interchangeably) and wanted to share two different versions of these.

Sweet Stuffed Squash

For the past few days I’ve been on a bit of a ‘feeling like I’m on cloud nine’ situation! As you may, or may not know a while back one of my recipes was chosen to be featured in Paleo Magazine Cookbook, I had submitted my recipe a while back and was still living in Michigan at that point (which is why in the book it says I’m from Michigan). It wasn’t until we had already moved over to the UK that I was told that my recipe had been chosen! I then had to do a write up for the book and send off a couple of photos. They ended up using just one of the photos I sent over, but I guess I didn’t have control over that! In any case a copy of the book (they sent a copy of the book to everyone featured) just arrived yesterday and it was such a surreal moment to see myself and my recipe featured in a book! Paleo Cinnamon Banana Bread

Paleo cinnamon banana bread

I try not to make/bake too many dessert or treat like recipes… ‘try’ being the operative word here because those things don’t last very long in our house and I definitely have poor control issues when it comes to such food! So I try and go as long as I can between making these things but when I do I want something SPECIAL!

One of my FAVOURITE treats is from my friend Alisa over at Paleo in PDX. I’ve made her ‘Cinnamon Roll Squash Muffins’ a number of times now and each time they come out a treat! The first time I made them I added in apples as well, you can see that version here.

Last week I really wanted to make these muffins again and was all ready to go but then I realised I didn’t have any squash of any kind, canned or fresh! And actually I’m not even sure I could find squash right now in England! I did have some bananas on hand though and thought why not sub these in for the squash instead! And then halfway through mixing the ingredients I thought why not turn this into banana bread instead? And I did! The result was a deliciously soft banana bread that was full of the flavour of cinnamon (just the way I like it) and with just the right amount of sweetness… [Read more…]
