Butternut Squash Meatballs with Zucchini & Carrot

Plate of butternut squash meatballs with zucchini and carrot

Last night at work I was caught in a bit of a situation. As we were closing up the kitchen for the night after the cooking class, one of the other girls working there was telling the chef how her friend is on a Paleo diet. Now I really DON’T like the term ‘diet’ but that’s not what bothered me.

The chef asked her what she meant by Paleo as she had never heard of it before. This person went on to say that Paleo means that you only eat meat and vegetables and nothing else. She also said that her friend who is following this ‘diet’ doesn’t eat grains which means he is probably malnourished…!!! [Read more…]

Sausage & Mixed Vegetable Frittata

Sausage and mixed vegetable frittata

Yesterday it was my dad’s birthday and the week before it was my mum’s. It’s at times like these when it hits me the hardest that I’m away from my family, on the other side of the world. Luckily now we have the technology to help us stay connected pretty easily, but when it comes to life events like birthdays, that’s when not being there in person is the worst!

Anyway don’t worry this isn’t going to be soppy post about how much I miss my family (A LOT)…. instead it’s going to be about FOOD glorious fooooood!!!

Remember when I wrote this post? Well this next recipe is a variation on that. I told you in the original post that it’s a recipe that can be changed up depending on the ingredients you have.

So I decided to make this version to show you how with changing the ingredients around you can have an entirely new dish. Don’t forget also that this recipe and the original both freeze really well so if you wanted to you could make extra and have it ready for later. Just remember to freeze in individual portions for easy re-heating. [Read more…]

Almond Butter Parsnip Fries

Plate of almond butter parsnip fries

In one of my recent posts I mentioned that I had quit sugar with the help of this book. As I mentioned in that post I absolutely love this cookbook! So far everything I’ve made from it has turned out great and there’s still SO much more for me to get through!

The cookbook is actually divided into sections.

  • Breakfast Ideas.
  • Smoothies.
  • Sweet Stuff.
  • Savoury Snacks.
  • Sweet Treats.
  • Green + Clean Meals.
  • Sugar-Free Kids.
  • Sauces.
  • A Final Cup of Tea.

Each section has a myriad of recipes and on top of this there are handy tips and tricks throughout the book for sugar-free eating.

So yesterday I decided to make one of the recipes out of the ‘Savoury Snacks’ section and made the ‘Totally Nutty Parsnip Fries’ which involves parsnip and almond butter and came out DELICIOUS! [Read more…]

Paleo Apple Crumble

Paleo apple crumble

Uhhhh I’m so annoyed at myself! I accidentally deleted some photos I had taken when I had made some slow cooker recipes! I was going through the camera trying to make more space and well I ended up accidentally deleting photos I shouldn’t have! I was cursing myself afterwards and I usually save everything to my laptop first but this time of course I didn’t do that!

Anyway I’ll get over it….. eventually.

Onto something more positive. It’s apple season here in Michigan and last weekend husband bought some apples from the Farmers Market and a couple of them were still sitting in the fridge waiting to be used so I decided to make some apple crumble and be done with them. I’m not a big baker, I’ll do it every now and then, although I wouldn’t exactly call this recipe baking since it’s only a few ingredients thrown together but the end result was AMAZING and even passed husband’s test of approval 😉
