Pumpkin Spiced Iced Chai Latte

Pumpkin spiced chai latte

Hello from Melbourne! I’ve been home for about a week now and over the jet lag I had going for the first couple of days! The flight over was looooooong as you can imagine and Joe and I pretty much didn’t sleep at all (seriously I don’t understand how some people can sleep for the entire flight!). So yeh the first couple of days I was feeling a bit loopy and just in a daze but as I said that’s passed!

We were greeted with warm weather when we arrived, in fact one day it reached 36C/96F but true to Melbourne weather the last few days it we had showers and cold weather! It went down to 8C/46F!!! I had forgotten how unpredictable Melbourne weather can be… luckily I packed a couple of warm things. Today the weather is better and hopefully we will be getting more of that summer sun that I desperately need, because I’m going to need it before I get back to England! [Read more…]

Sweet Stuffed Squash

For the past few days I’ve been on a bit of a ‘feeling like I’m on cloud nine’ situation! As you may, or may not know a while back one of my recipes was chosen to be featured in Paleo Magazine Cookbook, I had submitted my recipe a while back and was still living in Michigan at that point (which is why in the book it says I’m from Michigan). It wasn’t until we had already moved over to the UK that I was told that my recipe had been chosen! I then had to do a write up for the book and send off a couple of photos. They ended up using just one of the photos I sent over, but I guess I didn’t have control over that! In any case a copy of the book (they sent a copy of the book to everyone featured) just arrived yesterday and it was such a surreal moment to see myself and my recipe featured in a book! My recipe even made the front cover, the lamb in the left hand corner! [Read more…]

Paleo Carrot Pancakes with Coconut Butter

Paleo carrot pancakes with coconut butter

Here’s the GOOD news… we’ve found a new place to move into! BUT we can’t move in until early September so we’ll still be in this place for a bit longer but I we seriously can’t wait to move out of here! The new place is bigger, in a better location AND it’s not in an apartment block, it’s in a gated community with the houses attached to each other which means no more having to deal with people above us making noises all night! AND my FAVOURITE part of all is we will be living LITERALLY across the road from a castle! How cool is that! 🙂

I’m looking forward to seeing how the new kitchen works out… it’s always an adjustment when you move into a new place! By the way this will be our 6th move (including moving from Australia to America, then America to here) in 3 years so yes you can call me ‘The Moving Queen’ 😉

Anyway so this recipe I’m about to share with you is not very sweet at all, in fact the only thing that gives it some sweetness is the homemade coconut butter on top… don’t worry coconut butter is EASY to make! It could be sweeter depending on if you add sweetener to it which I didn’t, but other than that there’s no sweetener in these paleo carrot pancakes. [Read more…]
