Yesterday Joe and I FINALLY got up to go walking in the morning… we’d been talking about how it would be so much better to go in the morning while it was still light outside and not at night when we usually go and it’s pitch black (HELLO no street lights!) But since we’ve been talking about it it hasn’t actually happened until finally yesterday I forced us out of bed to go and I’m glad I did!

This week we also had a friend from back home visiting us. He was actually here for work for a week and of course we caught up with him and had a blast! We had him and his boss (who we also know) over for dinner last night and I cooked for everyone… well there were 4 of us to begin with then we had some more people over and well let’s just say it was a FUN night! I didn’t take any photos of the food though, which I’m regretting now! I made a bolognese sauce with grass-fed minced/ground lamb and mushrooms and seasoned it with Ras el Hanout, to go with it I made some roasted butternut squash and as a side dish/salad I made Summer Squash Caprese Noodle Salad from the Practical Paleo. The salad is fantastic and I’ll be making it again soon, this time I’ll make sure to take photos. Everyone loved the food (phew!)

Paleo Butternut Squash & Apple Muffins

So I told you in one of my latest posts that I’ve been baking a lot lately and just to prove my point here is another recipe I made recently.

Actually it’s just one recipe with an ingredient added. The original recipe comes courtesy of Paleoinpdx… as soon as I saw the recipe I knew it was something I HAD to make and seriously it is one of the BEST things I’ve ever eaten! Here’s a photo I took of the first batch I made… yep it’s one of those recipes you can’t make just once!

Joe is now obsessed with them…. after the first batch were all eaten (which didn’t take long) he kept asking me when I was going to make more. That’s when I decided to make another version with added diced apple.

These muffins have the most amazing cinnamon flavour which as you know is my FAVOURITE!

Paleo Apple Pancakes

Let me start off by saying THIS WEATHER IS CRAZY! All day I could hear the wind howling and even now at night I can still hear it. Walking to work today was a struggle, I almost lost my umbrella in this crazy wind but I managed to hold onto it, even though it had inverted and looked like it was about to snap in half… Naz 1: Wind 0!

I can only imagine what people in the areas directly affected by Hurricane Sandy are going through! If you’re one of these people please stay safe!!!

Anyway I’ve been baking a little A LOT lately, which tends to happen every now and then. I go for a long time without baking anything and then I bake a whole bunch and stop again! I have to admit I don’t have very good self-control when it comes to baked goods, even if they are sugar-free Paleo type treats, which is probably why I try not to bake too often… things like that don’t last very long in this house.

Yesterday it was my dad’s birthday and the week before it was my mum’s. It’s at times like these when it hits me the hardest that I’m away from my family, on the other side of the world. Luckily now we have the technology to help us stay connected pretty easily, but when it comes to life events like birthdays, that’s when not being there in person is the worst!

Anyway don’t worry this isn’t going to be soppy post about how much I miss my family (A LOT)…. instead it’s going to be about FOOD glorious fooooood!!!

Remember when I wrote this post? Well this next recipe is a variation on that. I told you in the original post that it’s a recipe that can be changed up depending on the ingredients you have.

So I decided to make this version to show you how with changing the ingredients around you can have an entirely new dish. Don’t forget also that this recipe and the original both freeze really well so if you wanted to you could make extra and have it ready for later.
