Lately it feels like I’ve been having mind blanks when it comes to creating recipes for this blog. Some weeks I feel like I just can’t come up with anything and just want to give up on the whole thing but I always manage to find something to share. The truth is what I share with you here is what Joe and I eat at home, that’s why you will find more savoury than sweet recipes here, because we just don’t eat them very often and honestly I’m not a big baker so those recipes are kind of every now and then for me. I try to photograph at least 3 recipes a week of what we eat to share with you but on other days our meals are pretty much simple to make and eat things! I cook a lot with grass-fed beef/lamb and turn that into different things like meatballs, sauce, patties etc and just change up the vegetables and seasonings. So I guess cooking for the blog is slightly different to cooking just for us to eat. Butternut Squash and Beef Chili Stew
It’s been a while since I shared a recipe! As you can tell I’ve been busy redesigning the blog! It took a while to get here… who knew changing up a blog would take up so much time! Well at least I learnt some things along the way, like the fact that getting someone else to redesign your blog can set you back hundreds, even thousands of dollars! No thanks! I still had to pay something towards the redesigning but it was worth it! I’m hoping to add a few add-ons here and there but for now I’m happy with the result.
In other news there’s just over 3 weeks left until we’re off home to Australia! The closer it gets to us going the more excited I become! I’m wondering how much Melbourne has changed and I’m looking forward to visiting all our old hang outs and of course seeing family! I’m trying to get some guest post bloggers on board for while I’m away to be able to still share posts with you but not sure how I’ll go. No idea how much blogging time I’ll get over there but I will hopefully still have the Facebook page going!
Anyway this recipe I’m sharing with you today I made a couple of weeks ago and have been waiting to share it since! It’s the perfect dish for this Autumn weather! I’ve been using the homemade chili spice seasoning in this recipe in other dishes as well, one of my favourite ways to use it is brushed on chicken thighs which I then bake in the oven. SO GOOD! Meatballs with Zucchini & Carrot ‘Pasta’
I’m just going to put this out there but sometimes blogging can be a pain in the arse! And yes in Australia we say arse and not ass 😉 Apologies if that came across too harsh but seriously some days I just can’t be arsed to sit down and post on here!
Take yesterday for example, I had planned on putting this recipe up yesterday but here’s what happened. First off it was a SUNNY day! Which as you may have realised from my weather rants on here this is rare for England. So of course I had to take advantage of this beautiful day, plus Joe had taken the day off work (well he took Monday off too to take me to the teaching agency… more on the below). So instead of sitting at home with me typing away on the computer we decided to head out for a day time walk and ended up running around like kids on the grass in the middle of the park. And you know what it was fun! And I didn’t feel bad about not having put up my blog post, even though on my FB page I said I would.
Yes I love writing here and posting recipes but it’s not my life. If I get the chance to be outside, enjoy the sun and enjoy the company of my husband well then that trumps everything else! I’m pretty sure… or at least I hope that other bloggers feel the same way! [Read more…]
Grass-Fed Meat & Vegetable Muffins
Remember how I said I was ready to get back into teaching, well I’m booked in to visit with a teaching agency next week so they can help me look for work and place me in schools around our area. I’m nervous/excited/anxious about the whole thing! It’s been a while since I’ve been in an actual classroom, let alone in a new country so fingers crossed it all goes well. And hopefully I can start picking up some work soon.
I feel like the longer I’m out of the classroom the harder it will be to get back into things and I don’t want that to happen. I’m hoping for a full-time job but for the start I think doing substitute/supply teaching might be the way to go just so I can get back into the swing of things. Well I’ll let you know how I get on at the teaching agency interview next week!
In other news I recently discovered a UK based website that sells grass-fed/pastured meats and raw milk. Actually they started following me on Twitter and then I jumped onto their website and was like OMG! Seriously that stuff makes me more excited than a new pair of shoes (I’m so not a girly girl)! Anyway I ended up ordering a few things from them, some marrow bones, some beef liver and raw milk… I didn’t order any other meat though since our freezer is already packed full but decided to get some marrow and liver since these are often bits of the animal that people bypass but they are some of the healthiest part of an animal, plus they are usually cheaper than the prime cuts because of the fact that people bypass them.
