Lately it feels like I’ve been having mind blanks when it comes to creating recipes for this blog. Some weeks I feel like I just can’t come up with anything and just want to give up on the whole thing but I always manage to find something to share. The truth is what I share with you here is what Joe and I eat at home, that’s why you will find more savoury than sweet recipes here, because we just don’t eat them very often and honestly I’m not a big baker so those recipes are kind of every now and then for me. I try to photograph at least 3 recipes a week of what we eat to share with you but on other days our meals are pretty much simple to make and eat things! I cook a lot with grass-fed beef/lamb and turn that into different things like meatballs, sauce, patties etc and just change up the vegetables and seasonings. So I guess cooking for the blog is slightly different to cooking just for us to eat. Chestnut & Sweet Potato ‘Pasta’
The time is officially here! Tomorrow is the day we finally fly out on our way back home to Oz! Even as I sit here typing this, and even though suitcases are packed and last minute stuff is being done before we leave it still doesn’t seem real… I don’t think it will seem real until we get off the plane in Melbourne and see our families, and even then it will probably take time to properly digest the fact that we’re there.
So you may have realised that I’m actually getting in a bit early with sharing this recipe, if you follow my page on Facebook and actually get to see my posts there, because we all know how much Facebook likes to share posts on pages with everyone (insert sarcastic emoji here!), you may have seen that I said due to leaving for holidays I will only be posting 2x week from now on, and doing a Monday + Friday thing. Well life happens, and I haven’t had a chance to develop as many recipes as I’d like to over this time so… I’m most likely just going to be sharing one post a week (sometimes two) while I’m away and getting back to normal scheduling when I get back. Lemon Tarragon Herbed Butter
I debated whether to share this recipe or not, I mean I have a feeling most people would already know how to make herbed butter but at the same time maybe some people don’t? In any case I thought it would be a good one to feature as a recipe here since herbed butter is so versatile! To be honest it had been a while… actually a long time since I had made it myself but since I was planning on making a whole chicken in the slow cooker and wanted to use this in there, I decided to share it with you. The recipe for the chicken will be coming up as well!
So what is herbed butter? Basically it’s taking a softened block of butter and adding in fresh herbs to it and mixing together. Some people also use dried herbs but I like using fresh. What you use is up to you and depends on what you’re going to pair it with. I also like adding lemon zest or orange zest as well to really liven up the flavours! Once you’ve made your herbed butter you can use it for a number of things like cooking vegetables in it or adding it to some baked potatoes or adding some on top of a well cooked piece of steak… YUM! Slow Cooker Spicy Chicken with Grilled Peaches
Is it just me or does it feel like the warm weather just flew by in a flash? I’m not sure how it is where you live but it’s definitely getting much colder in our part of England! I should be grateful though for the fact that we had a pretty decent summer by English standards this year… and I am, grateful.
With Autumn (Fall) upon those of us living in the Northern hemisphere, it’s time to switch up those light summer recipes into the cosy warm recipes that Autumn has to offer. When we were living in Michigan, this was my favourite season. I loved seeing the leaves on the trees change colour and all that was involved in the Season over there. Americans definitely go out all out when it comes to these things, much more than the Australians and the English as I’ve seen so far! I LOVED all the pumpkins everywhere during this time in the States… I’m glad I had a chance to experience that! [Read more…]
