As some of you may know from reading this blog and me mentioning it on a few occasions, I’ve had ongoing issues with my digestion for a number of years now. I’ve been through numerous tests, medications, antibiotics etc but still suffer from poor digestion. Paleo has helped somewhat in terms of me becoming more aware of how my body reacts to certain foods/drinks, for e.g. things like coffee and even dark chocolate upset my stomach (the latter is harder to let go of). Gluten is another trigger for me which I wouldn’t have known if I hadn’t done a 30 day elimination challenge (hello Whole30!). Also I need to REALLY focus on and chew my food properly and then give myself time to sit and digest. If I rush and chow down a plate of food without any thought and then leave the table without giving myself time to digest then I feel it and it’s not pleasant!

Paleo is NOT the answer to everything though, even if people think it is. Yes it has helped me tremendously by like as I said above helping me to become more in tune with my body but sometimes more needs to be done. So with that in mind I’m FINALLY, after a long time of indecisiveness going to see a naturopath tomorrow, I personally suspect some sort of gut bacteria issue like SIBO but I won’t know for sure until I get tested. So fingers crossed I leave the naturopath tomorrow with some answers!

Anyway lets move onto more important issues like today’s recipe (she says after talking about her digestion problems!). So most of the recipes I share with you here are things I know I want to make for the blog, I don’t plan weeks in advance but I know for example the day before cooking that I’m putting such and such meat out because I want to make something for the blog with it and so on. On some occasions though I don’t plan on using what I make on the blog until the very end, so I’ll make something and then when it’s done I’ll think hmmm this might be a good one for the blog. This is of course usually a savoury dish because dessert/treat recipes usually need to be tested more than once and need specific measurements.

This dish is one of those that I chose to put on the blog last minute. It’s super simple, like most of my recipes but has amazing flavours and definitely satisfies!

I try not to make/bake too many dessert or treat like recipes… ‘try’ being the operative word here because those things don’t last very long in our house and I definitely have poor control issues when it comes to such food! So I try and go as long as I can between making these things but when I do I want something SPECIAL!

One of my FAVOURITE treats is from my friend Alisa over at Paleo in PDX. I’ve made her ‘Cinnamon Roll Squash Muffins’ a number of times now and each time they come out a treat! The first time I made them I added in apples as well, you can see that version here.

Last week I really wanted to make these muffins again and was all ready to go but then I realised I didn’t have any squash of any kind, canned or fresh! And actually I’m not even sure I could find squash right now in England! I did have some bananas on hand though and thought why not sub these in for the squash instead! And then halfway through mixing the ingredients I thought why not turn this into banana bread instead? And I did! Is it just me or did last week just go by REALLY REALLY slowly? I can’t believe it hasn’t even been 2 weeks since I’ve been back from my holiday! And yes I will definitely be doing a couple of blog posts about it but I’m still trying to decide which photos to include in the posts since I have SO MANY! I should have something up this week and probably next week too.

For this post though I wanted to share a recipe I came up with over the weekend. Sometimes I get these ideas in my head of wanting to create a dish and then I just have to run with it and keep my fingers crossed that it will work… luckily 99% of the time it does!

This recipe uses pork loin steaks and Morello cherries in syrup. I’m not 100% sure if the Morello cherries can be classified as paleo since they have sugar in them BUT the ingredients on my jar of Morello cherries were clean and I believe the sugar is there to thicken up the syrup that the cherries sit in. In any case it’s not an ingredient that I use very often but there was something about pork and cherries together that had me thinking! I’ve heard that duck and Morello cherries go well together but I personally had never heard the same about pork. I came across a rather interesting blog yesterday. There’s a woman in Amsterdam who is taking on life as a cavewoman for 100 days. From what I’ve read she has already been following a Paleo diet but is taking it to the next level by attempting to imitate homo sapiens living 40,000 years ago. You can read more about her journey and progress here… I think it’s pretty cool!

I’m not sure that I could survive without my modern kitchen equipment for cooking! I wouldn’t even know where to build a fire without someone thinking I was a little crazy so props to her for taking on this experiment.

Speaking of modern kitchen equipment… or maybe not so modern since it’s been around for a long time but my slow cooker is probably one of my most useful kitchen items. I bought mine back in America for dirt cheap and while it’s not as fancy as some of the other models and it is heavy and clunky it gets the job done! Joe on the other hand isn’t a big fan of it especially when I make bone broth in it… he says I stink the house out when I make it. It’s kind of true… why does bone broth smell so bad when it’s cooking?!

I use it a lot for cooking up a whole chicken and then using the meat for meals throughout the week, although it never lasts more than 2-3 days max. Then of course I freeze the leftover bones to make chicken stock when I need it. I just think having a piece of equipment where you can just throw a bunch of ingredients in and turn on a switch and it will cook you delicious food is very much worth it, even if it does take up a lot of room (mine does at least!) So yeh if you don’t have a slow cooker then hurry up get one! [Read more…]
