Persian Roasted Butternut Squash Soup

It’s been a while since I’ve shared a recipe post here! As you may know Joe and I were away visiting family in Australia for about 6 weeks and we just returned back to England about a week ago. As you may imagine our trip was AMAZING and it was just incredible to be able to spend that time with our families and also catch up with friends. I won’t lie, it was hard to leave (again!) and I’ve definitely felt the impact of being away from everyone. Although I’m pretty used to it by now, when you spend a big chunk of time away like that it’s always hard at first to get back into your routine. Anyway other than spending time with family and friends we got to enjoy some GREAT weather while we were there as well, granted it did rain a couple of times but other than that the weather was nice and warm and I definitely took advantage of it! I’m just kind of sad that we missed out on the heatwave that happened this past week with temperatures in the high 40′sC/100′sF! Yeh I might sound crazy wanting to have heat like that but this cold, wet weather in England is making me wish we could just have one day of sunshine and hot weather…. you know the whole ‘the grass is always greener’ thing.

Anyway since it is cold and since the weather is not on the list of things I can control I’ve been using it to my advantage to make delicious warming meals. My slow cooker/crock-pot has been getting a good workout with making bone broths and slow cooked meats, and of course one of the best ways to keep warm is with a nice big bowl of steaming hot soup! Can you believe that it’s been 6 months since Joe and I moved to England?! I SERIOUSLY can’t believe it! It’s a strange feeling because when I think back it doesn’t really feel like we’ve been here for that long but I swear the days just fly by! I went back today and read over this post I wrote just before we left the States… Joe and I miss a lot of things from our life in America, I think after 2 years it was starting to feel like home there and then we decided to come here and now we are working on settling down here. I’m not sure it will be a permanent thing… us living here but for now this is where we have to be 🙂 Who knows what will happen in another year, if we’ll be on the move again or if we’ll decide to stick it out here. In any case I often feel like a modern day nomad… the suitcases that have travelled with us since 2011 from Australia are big reminders of that for me! Anyway you gotta do these things when you’re young right! 😉

Now onto more important things like FOOD hahaha! I thought it would be fun to share with you my top 5 favourite vegetables, I know when some people think of the “paleo diet” they think we all just sit there eating bacon and eggs, and well I’m not saying we don’t but we (well I hope we do) also eat a lot of veggies and fruit! I’ve read from a couple of other paleo bloggers that when they made the switch people would often ask them what they ate if they couldn’t eat bread or pasta… as if these are the only two foods on the planet! Paleo for me personally has opened the doors to a much wider variety of food and things that I may not have ever tried before. Now I enjoy picking up a different vegetable or even fruit when I’m out shopping and I have fun experimenting with different ways to cook/use these things. For e.g. I recently picked up a cassava/yuca, I’ve NEVER tasted one before let alone cooked it but I wanted to try something different so I picked it up.

The sun is finally OUT! Trust me if you were here you’d be just as excited 😉 It’s still a little cold outside BUT I no longer have to wear my BIG PUFFY jacket and gloves and beanie when Joe and I go walking now. It’s funny how quickly you can get used to new conditions… if I was still living in Australia I would think this weather was FREEZING but after just a few months of being here that’s all changed.

Because of the nice change in weather we ended up doing a 7.8km/4.8mile walk on the weekend, we walked through one of the local parks and it was beautiful! I really should take some pictures one day. We also came across a sign for a charity walk taking place on the 19th of May, you get to decide how long you want to walk (3 miles, 6 miles or 12 miles). If we do it I think we’ll do the 6 mile walk!

Ohhh before I go on, I just want to tell you about a little change on my blog, I now have a Whole30 tab at the top of my homepage. I know a lot of people who are doing the program now so I thought I’d go through my recipes and put the Whole30 approved ones in one place. As you know from some of my previous posts I’m working on getting the sweet stuff out of my system right now, as well as some other stuff. [Read more…]

If you looked outside our living room window right now you would think it was the middle of Winter and not the beginning of Spring! There is snow EVERYWHERE and it has been FREEZING for the past few days! According to The Daily Mail this is the coldest March since 1963!

Apparently last year at this time temperatures reached to 22C/71F which is not even HOT, especially to an Aussie who is used to temperatures of 30+C/86+F… but I’ll tell you what that 22C sounds PERFECT right now! In fact anything over 10C/50F would make me happy right now… a statement I would have NEVER made back in Australia.

Since the weather’s been like this I haven’t really felt like doing much other than staying inside and keeping warm! Luckily The Healthy Life Summit is on, so I spent most of Sunday listening to the first day of podcasts and I’m currently listening to the second day of talks while typing out this blog post. So far the talks have been excellent! Who else has been listening?

Uhhhh well enough about the weather, it’s unfortunately one of those things that you can’t control but hopefully the sun will come out to play soon (fingers crossed). [Read more…]
