Chestnut & Sweet Potato ‘Pasta’

Bowl of chestnut and sweet potato pasta

The time is officially here! Tomorrow is the day we finally fly out on our way back home to Oz! Even as I sit here typing this, and even though suitcases are packed and last minute stuff is being done before we leave it still doesn’t seem real… I don’t think it will seem real until we get off the plane in Melbourne and see our families, and even then it will probably take time to properly digest the fact that we’re there.

So you may have realised that I’m actually getting in a bit early with sharing this recipe, if you follow my page on Facebook and actually get to see my posts there, because we all know how much Facebook likes to share posts on pages with everyone (insert sarcastic emoji here!), you may have seen that I said due to leaving for holidays I will only be posting 2x week from now on, and doing a Monday + Friday thing. Well life happens, and I haven’t had a chance to develop as many recipes as I’d like to over this time so… I’m most likely just going to be sharing one post a week (sometimes two) while I’m away and getting back to normal scheduling when I get back. So apologies for that, but I guess that’s how life goes sometimes 🙂 [Read more…]

Paleo Rose Water Spiced Stewed Fruit

Happy Monday! I hope everyone had an enjoyable weekend! We had some nice weather here so we tried to make the most of it and spent time outdoors. We also ended up visiting one of the shopping centres (malls) near our place since my phone has been acting up and needs to be replaced. Looking forward to getting my new phone since the screen on this one has been going a bit crazy!

Sunday night is also Downton Abbey night for us… I know this season hasn’t started up yet in the U.S. so I won’t say anything other than so far it’s been quiet interesting to say the least! Do you watch it?

Over the weekend I also made this little sweet treat… I made something similar earlier in the week but wasn’t 100% happy with the flavour so I had to make it again, you know to get it just right! 😉

What I love about this recipe is that there is no added sweetener… no honey, no coconut sugar etc, the sweetness comes from the fruit and from the spices I use. Stewed fruit is delicious and a welcome change at this time of year when just eating fruit cold may not be so appealing. You can eat this on its own or pair it with some eggs in the morning. It would also be a great accompaniment to some homemade coconut milk ice-cream if you wanted a really special treat! [Read more…]

Rooibos Tea Latte

Rooibos tea latte

As some of you may know I had to give up drinking coffee a while back. I still have it occasionally here and there if I’m out somewhere and usually it’s an espresso, but I stopped buying and drinking coffee at home a while back. I do sometimes miss having it in the mornings, especially now that the weather is cooling down but luckily I also really love my tea!

Recently I was at our local supermarket and they had a whole bunch of different teas on sale so I grabbed some and now I have a cupboard full of teas to enjoy! My favourite lately has been roobios tea… which as it turns out is a great caffeine free alternative to coffee.

My latest obsession has been to make roobios tea lattes and now that pumpkin season is here I’ve been adding pumpkin spice to the mix and it tastes GREAT!

So if you’re even in the mood for something different or you’re trying to reduce your coffee intake then give this latte a shot! [Read more…]
