I made this recipe when we were still in England and the weather was starting to get quite cold! Root vegetables being in season back there, I decided to make these parsnip fries one day! Parsnips are one of those vegetables which I feel are quiet underused… or maybe that’s just me?

In any case this root vegetable is quite tasty and can be served up in so many ways. For e.g. check out what my friend Alisa created with her parsnips recently (YUM!). I decided to go for fries/chips (I use these two terms interchangeably) and wanted to share two different versions of these.

Spiced Butternut Squash Fries

First off I hope everyone had a good Easter! Ours wasn’t very eventful, we didn’t really do anything special for it… Joe had a long weekend though so we spent Saturday & Sunday just lazing about the house and going for our usual walk, except that the weather was a bit better this weekend and the sun was actually shining! We did our walks through two different parks (one on Saturday and one on Sunday) and I loved it! The parks here are beautiful and I felt like staying there the whole day! Seriously considering buying a picnic blanket and walking over there with my book and spending a day there reading… only if it weren’t still so cold!

On Monday I had this brilliant idea for us to go on a day trip to the Cotswolds. For those of you who don’t know the Cotswolds are… actually I’ll just let good old Wikipedia to explain it to you 😉

Anyway so I convinced Joe to go to part of the Cotswolds region and for us to do a walk over there. Little did I know what I was getting us in to! So we arrived at our starting point, in a village called Broadway and the walk would take us to Broadway Tower which is the second highest point of the Cotswolds. [Read more…]

Almond Butter Parsnip Fries

In one of my recent posts I mentioned that I had quit sugar with the help of this book. As I mentioned in that post I absolutely love this cookbook! So far everything I’ve made from it has turned out great and there’s still SO much more for me to get through!

The cookbook is actually divided into sections.

  • Savoury Snacks.
  • Sweet Treats.
  • Green + Clean Meals.
  • Sugar-Free Kids.
  • Sauces.
  • A Final Cup of Tea.

Each section has a myriad of recipes and on top of this there are handy tips and tricks throughout the book for sugar-free eating.

So yesterday I decided to make one of the recipes out of the ‘Savoury Snacks’ section and made the ‘Totally Nutty Parsnip Fries’ which involves parsnip and almond butter and came out DELICIOUS! [Read more…]
