About a week ago I decided to cut out coffee for a few weeks, I don’t think there is anything wrong with coffee as long as you tolerate it but I felt like I was relying on it a bit too much and wanted to give my body a break. So I’ve been trying some alternatives to coffee in the morning, like Chai, Rooibos, Earl Grey other herbal tea varieties and things like warm water with ACV or lemon juice and a little honey to sweeten.

I recently came across a drink called ‘Chia Fresca’ and while I had head of people adding chia seeds to water and drinking it, I didn’t realise this drink had an actual name. Turns out that this drink hails from Mexico! When I saw this post I knew I wanted to try it out for myself so I came up with this quick and easy to make ‘Ginger Lime Chia Fresca’. Welcome to the start of a new week! Apologies for the lack of posts last week, I’ve been feeling a bit under the weather lately and just didn’t have it in me to share any blog posts, I was also so caught up in not feeling well that I totally missed our one year anniversary of moving to the UK! It’s cold, it’s cold… IT’S COLD! Did I mention it’s cold? Last night we went walking and I wore so many layers that it was hard for me to even move and today at work the heating wasn’t working properly so I was sitting there freezing and it’s not even officially winter yet!

As if that wasn’t bad enough I have people back home constantly reminding me of how warm it’s getting there and seeing photos of people at the beach or sitting outside at a nice cafe…. NOT FAIR!

On the plus side I think our heating bill will be a lot cheaper this year since for some reason our new apartment gets quiet warm so we don’t need to run the heater all day. Speaking of apartments there’s an old lady that lives in the apartment across from us and she must be in her late 80′s, anyway today she put up Xmas decorations on the door at the main entrance to our building which I thought was so cute and when I complimented her on it she seemed so pleased 🙂 [Read more…]

Yesterday it was my dad’s birthday and the week before it was my mum’s. It’s at times like these when it hits me the hardest that I’m away from my family, on the other side of the world. Luckily now we have the technology to help us stay connected pretty easily, but when it comes to life events like birthdays, that’s when not being there in person is the worst!

Anyway don’t worry this isn’t going to be soppy post about how much I miss my family (A LOT)…. instead it’s going to be about FOOD glorious fooooood!!!

Remember when I wrote this post? Well this next recipe is a variation on that. I told you in the original post that it’s a recipe that can be changed up depending on the ingredients you have.

So I decided to make this version to show you how with changing the ingredients around you can have an entirely new dish. Don’t forget also that this recipe and the original both freeze really well so if you wanted to you could make extra and have it ready for later.
