A few years ago I stumbled upon a recipe for chia pudding and ever since then I’ve loved making and eating them. I don’t have them on a regular basis, but every now and then I get a craving for one and make a small batch. I recently made an apple chia pudding and topped it with some kiwi fruit. Spring is in the air! I can’t tell you how GOOD it feels to see the sun out and to feel it on your skin when you walk outside. When you live in a country like England that’s known for it’s bad weather (dark, cold and a lot of rain) you can’t help but smile and appreciate a nice sunny day. I can’t really remember what the weather was like this time last year but when I asked Joe he said it was still very cold. We had a great Summer last year though and I’m keeping my fingers crossed that this year will be the same. Ginger Lime Chia Fresca

About a week ago I decided to cut out coffee for a few weeks, I don’t think there is anything wrong with coffee as long as you tolerate it but I felt like I was relying on it a bit too much and wanted to give my body a break. So I’ve been trying some alternatives to coffee in the morning, like Chai, Rooibos, Earl Grey other herbal tea varieties and things like warm water with ACV or lemon juice and a little honey to sweeten.

I recently came across a drink called ‘Chia Fresca’ and while I had head of people adding chia seeds to water and drinking it, I didn’t realise this drink had an actual name. Turns out that this drink hails from Mexico! When I saw this post I knew I wanted to try it out for myself so I came up with this quick and easy to make ‘Ginger Lime Chia Fresca’.
