For the past few days I’ve been on a bit of a ‘feeling like I’m on cloud nine’ situation! As you may, or may not know a while back one of my recipes was chosen to be featured in Paleo Magazine Cookbook, I had submitted my recipe a while back and was still living in Michigan at that point (which is why in the book it says I’m from Michigan). It wasn’t until we had already moved over to the UK that I was told that my recipe had been chosen! I then had to do a write up for the book and send off a couple of photos. They ended up using just one of the photos I sent over, but I guess I didn’t have control over that! In any case a copy of the book (they sent a copy of the book to everyone featured) just arrived yesterday and it was such a surreal moment to see myself and my recipe featured in a book! Here’s the GOOD news… we’ve found a new place to move into! BUT we can’t move in until early September so we’ll still be in this place for a bit longer but I we seriously can’t wait to move out of here! The new place is bigger, in a better location AND it’s not in an apartment block, it’s in a gated community with the houses attached to each other which means no more having to deal with people above us making noises all night! AND my FAVOURITE part of all is we will be living LITERALLY across the road from a castle! How cool is that! 🙂

I’m looking forward to seeing how the new kitchen works out… it’s always an adjustment when you move into a new place! By the way this will be our 6th move (including moving from Australia to America, then America to here) in 3 years so yes you can call me ‘The Moving Queen’ 😉

Anyway so this recipe I’m about to share with you is not very sweet at all, in fact the only thing that gives it some sweetness is the homemade coconut butter on top… don’t worry coconut butter is EASY to make! It could be sweeter depending on if you add sweetener to it which I didn’t, but other than that there’s no sweetener in these paleo carrot pancakes. [Read more…]

Paleo Rose Water Chai Pancakes & Jam

Yesterday Joe and I FINALLY got up to go walking in the morning… we’d been talking about how it would be so much better to go in the morning while it was still light outside and not at night when we usually go and it’s pitch black (HELLO no street lights!) But since we’ve been talking about it it hasn’t actually happened until finally yesterday I forced us out of bed to go and I’m glad I did!

This week we also had a friend from back home visiting us. He was actually here for work for a week and of course we caught up with him and had a blast! We had him and his boss (who we also know) over for dinner last night and I cooked for everyone… well there were 4 of us to begin with then we had some more people over and well let’s just say it was a FUN night! I didn’t take any photos of the food though, which I’m regretting now! I made a bolognese sauce with grass-fed minced/ground lamb and mushrooms and seasoned it with Ras el Hanout, to go with it I made some roasted butternut squash and as a side dish/salad I made Summer Squash Caprese Noodle Salad from the Practical Paleo. The salad is fantastic and I’ll be making it again soon, this time I’ll make sure to take photos. Everyone loved the food (phew!)

Carrot Smoothie

Just wanted to share this quick smoothie recipe with you. It was something I just threw together and well it turned out YUM so here it is….

Carrot Smoothie

Ingredients:
  • 1.5 cups unsweetened almond milk.
  • 1 medium carrot, peeled and diced.
  • 1/2 frozen banana.
  • 1 tbsp almond butter.
  • 1 tsp cinnamon.
  • Pinch of nutmeg.
  • 1/2 tsp vanilla extract.
  • 1/4 tsp coconut butter or you could use coconut oil.
  • Raw honey/maple syrup for sweetening.
  • Toasted coconut flakes (for garnish).
Method:

Place all ingredients except for the toasted coconut flakes into a high-powered blender like a Vitamix and blend! If you’re using a regular blender then grate the carrot before adding it in. Sprinkle toasted coconut flakes on top if you like.
