Apple Tarragon Meatballs

It’s been a great first week in our new place! We’re pretty much settled in and unpacked which always feels nice. Both Joe and I feel so much more content and happier in this place than the last one… we both keep saying we wish we were living here from the start but I’m sure we appreciate it that much more because we had to go through living in a not so nice place with lots of problems at the start.

Yesterday we went for a bit of a wander around the neighbourhood and I snapped some photos so I’ll share those in another post some time this week hopefully. Also for those of you who aren’t following me on my Facebook page you might not know that we are now living pretty much across the road from a castle! Crazy huh?! We even get free annual passes to the castle which we collected yesterday, which means we can pop over whenever we like! So yep overall life is good 🙂

So on to the recipe! This is the first one I’m sharing from our new place… YAAAYYYY!!! For this recipe I got to thinking about classic flavour combinations, specifically two or three ingredients that go REALLY well together and that have stood the test of time. Things like salt and caramel, garlic, tomato and basil or chocolate and bacon… YEP! All fantastic flavour combinations.

One of the quickest and easiest things I make are meatballs, we buy a lot of ground meat, it’s cheaper than a lot of other cuts of meat and convenient as it can be prepared a number of different ways. Plus you can flavour it in SO many different ways that personally I find it hard to get sick of. Plus I think if you’re looking at going paleo and are finding it daunting because you think grass-fed/pastured meat is expensive then using ground meat is a great option!

Anyway back to the recipe! So since we had some pastured ground pork in the freezer I decided to use that as the base for my meatballs, then I thought about what flavours go well with pork and I decided on apple and tarragon. I mean talk about a classic combination! Pork and apples together are AMAZING but the addition of tarragon makes it even BETTER!

Apple Tarragon Meatballs

Apple, Tarragon and Pork Meatballs

Ingredients:
  • 500gm/1.1lbs ground pork (preferably pastured pork).
  • 1 Pink Lady apple or apple of your choice (Pink Ladies are one of my favourite apples!).
  • 2 tsp dried tarragon.
  • Himalayan salt, to taste.
  • Freshly cracked black pepper, to taste.
Method:

Preheat oven to 180C/350F.

Line a baking tray with foil or parchment paper.

Place ground pork into a mixing bowl.

Wash, core, peel and grate the apple on a box grater or in a food processor. Add the grated apple to the pork.

Add the tarragon and season with the S&P.

Using your hands mix everything together well.

Form medium sized meatballs with your hands with the mixture and place onto the lined baking tray as you go.

Place in the oven and bake for 25-30 minutes, or until the meatballs are cooked through.

Serve with spiralised zucchini noodles and enjoy!

I’m just going to put this out there but sometimes blogging can be a pain in the arse! And yes in Australia we say arse and not ass 😉 Apologies if that came across too harsh but seriously some days I just can’t be arsed to sit down and post on here!

Take yesterday for example, I had planned on putting this recipe up yesterday but here’s what happened. First off it was a SUNNY day! Which as you may have realised from my weather rants on here this is rare for England. So of course I had to take advantage of this beautiful day, plus Joe had taken the day off work (well he took Monday off too to take me to the teaching agency… more on the below). So instead of sitting at home with me typing away on the computer we decided to head out for a day time walk and ended up running around like kids on the grass in the middle of the park. And you know what it was fun! And I didn’t feel bad about not having put up my blog post, even though on my FB page I said I would.

Yes I love writing here and posting recipes but it’s not my life. If I get the chance to be outside, enjoy the sun and enjoy the company of my husband well then that trumps everything else! I’m pretty sure… or at least I hope that other bloggers feel the same way! [Read more…]

Last night at work I was caught in a bit of a situation. As we were closing up the kitchen for the night after the cooking class, one of the other girls working there was telling the chef how her friend is on a Paleo diet. Now I really DON’T like the term ‘diet’ but that’s not what bothered me.

The chef asked her what she meant by Paleo as she had never heard of it before. This person went on to say that Paleo means that you only eat meat and vegetables and nothing else. She also said that her friend who is following this ‘diet’ doesn’t eat grains which means he is probably malnourished…!!! [Read more…]
