Yesterday Joe and I FINALLY got up to go walking in the morning… we’d been talking about how it would be so much better to go in the morning while it was still light outside and not at night when we usually go and it’s pitch black (HELLO no street lights!) But since we’ve been talking about it it hasn’t actually happened until finally yesterday I forced us out of bed to go and I’m glad I did!

This week we also had a friend from back home visiting us. He was actually here for work for a week and of course we caught up with him and had a blast! We had him and his boss (who we also know) over for dinner last night and I cooked for everyone… well there were 4 of us to begin with then we had some more people over and well let’s just say it was a FUN night! I didn’t take any photos of the food though, which I’m regretting now! I made a bolognese sauce with grass-fed minced/ground lamb and mushrooms and seasoned it with Ras el Hanout, to go with it I made some roasted butternut squash and as a side dish/salad I made Summer Squash Caprese Noodle Salad from the Practical Paleo. The salad is fantastic and I’ll be making it again soon, this time I’ll make sure to take photos. Everyone loved the food (phew!)

Herb Frittata (Kookoo Sabzi)

It’s officially my birthday month (and Joe’s)!!! So what better way to kick off the month than with one of my favourite dishes.

Isn’t it funny how the smell of food or even just a few ingredients can set off a trigger of memories in your mind? I’ve been craving some Persian food lately and wanted to make something fairly simple for lunch today. A lot of Persian food consists of a lot of ingredients plus somewhat long cooking times and while I’m happy to do that when I have the time and patience sometimes I just want a quick meal.

I decided to make ‘Kookoo Sabzi’ which translated means Herb Frittata. Kookoo = frittata and Sabzi = herbs. There are a few kookoo recipes actually, each made with different ingredients, for e.g. we have Kookoo Sibzamini (sibzamini = potatoes), Kookoo Morgh (Morgh = chicken) and Kookoo Bademjan (Bademjan = eggplant) just to name a few. Yesterday it was my dad’s birthday and the week before it was my mum’s. It’s at times like these when it hits me the hardest that I’m away from my family, on the other side of the world. Luckily now we have the technology to help us stay connected pretty easily, but when it comes to life events like birthdays, that’s when not being there in person is the worst!

Anyway don’t worry this isn’t going to be soppy post about how much I miss my family (A LOT)…. instead it’s going to be about FOOD glorious fooooood!!!

Remember when I wrote this post? Well this next recipe is a variation on that. I told you in the original post that it’s a recipe that can be changed up depending on the ingredients you have.

So I decided to make this version to show you how with changing the ingredients around you can have an entirely new dish. Don’t forget also that this recipe and the original both freeze really well so if you wanted to you could make extra and have it ready for later.
