I am a self-confessed cooking show junkie! I love watching cooking shows, especially the competition style ones like MasterChef or Top Chef. Lately I’ve been watching the latest season of Australia’s My Kitchen Rules. I’m obsessed with that show right now, plus I love watching it because of the Aussie accents… reminds me of home!

Anyway on a recent episode one of the couples made a dish using cinnamon and salmon which I thought was interesting. They made a cinnamon biscuit/cookie to go with their salmon, but in the end it didn’t work out so well for them. I was intrigued by the idea though and decided to give my own twist on the whole cinnamon and salmon idea. I can’t believe that in 3 days time Joe and I are going to be getting on a plane back home! Honestly it just doesn’t seem real to me! It’s like ahhhhhhhh I just want to scream because I’m so excited but I wish we could just skip over the whole 20+ hour plane trip and the layover and the jetlag etc! Oh but it will be so good to see home again and spend time with family and friends. Anyway now I have a huge smile on my face 😀

Ok so remember when I posted this recipe and said that you could use the leftovers to make something else, well this is the something else that I made! It’s a super simple salad but very tasty! It seems that ever since I passed the halfway mark of Whole30 the days have been going by reaaallllllyyyy slowly! Right now I feel as if these next 12 days are never going to end!

Last night I felt like making something different, something that I’ve probably only ever made once or twice before, in fact I can’t even remember the last time I made these myself. The main part of the recipes comes courtesy of Balanced Bites with a few minor adjustments in the recipe. I have been following this blog recently and am eager to get my hands on the Practical Paleo cookbook which from what I’ve heard is choc full of great easy and delicious Paleo recipes.

I paired the main part of this dish, which is lamb chops with an easy but delicious raw kale salad. I absolutely LOVE kale! It is packed full of goodness with things like fiber, iron, calcium, vitamin K, vitamin A, vitamin C, antioxidants and it is also an anti-inflammatory food. [Read more…]
