Can you believe that it’s been 6 months since Joe and I moved to England?! I SERIOUSLY can’t believe it! It’s a strange feeling because when I think back it doesn’t really feel like we’ve been here for that long but I swear the days just fly by! I went back today and read over this post I wrote just before we left the States… Joe and I miss a lot of things from our life in America, I think after 2 years it was starting to feel like home there and then we decided to come here and now we are working on settling down here. I’m not sure it will be a permanent thing… us living here but for now this is where we have to be 🙂 Who knows what will happen in another year, if we’ll be on the move again or if we’ll decide to stick it out here. In any case I often feel like a modern day nomad… the suitcases that have travelled with us since 2011 from Australia are big reminders of that for me! Anyway you gotta do these things when you’re young right! 😉

Now onto more important things like FOOD hahaha! I thought it would be fun to share with you my top 5 favourite vegetables, I know when some people think of the “paleo diet” they think we all just sit there eating bacon and eggs, and well I’m not saying we don’t but we (well I hope we do) also eat a lot of veggies and fruit! I’ve read from a couple of other paleo bloggers that when they made the switch people would often ask them what they ate if they couldn’t eat bread or pasta… as if these are the only two foods on the planet! Paleo for me personally has opened the doors to a much wider variety of food and things that I may not have ever tried before. Now I enjoy picking up a different vegetable or even fruit when I’m out shopping and I have fun experimenting with different ways to cook/use these things. For e.g. I recently picked up a cassava/yuca, I’ve NEVER tasted one before let alone cooked it but I wanted to try something different so I picked it up.

I’m just going to put this out there but sometimes blogging can be a pain in the arse! And yes in Australia we say arse and not ass 😉 Apologies if that came across too harsh but seriously some days I just can’t be arsed to sit down and post on here!

Take yesterday for example, I had planned on putting this recipe up yesterday but here’s what happened. First off it was a SUNNY day! Which as you may have realised from my weather rants on here this is rare for England. So of course I had to take advantage of this beautiful day, plus Joe had taken the day off work (well he took Monday off too to take me to the teaching agency… more on the below). So instead of sitting at home with me typing away on the computer we decided to head out for a day time walk and ended up running around like kids on the grass in the middle of the park. And you know what it was fun! And I didn’t feel bad about not having put up my blog post, even though on my FB page I said I would.

Yes I love writing here and posting recipes but it’s not my life. If I get the chance to be outside, enjoy the sun and enjoy the company of my husband well then that trumps everything else! I’m pretty sure… or at least I hope that other bloggers feel the same way! [Read more…]

Remember how I said I was ready to get back into teaching, well I’m booked in to visit with a teaching agency next week so they can help me look for work and place me in schools around our area. I’m nervous/excited/anxious about the whole thing! It’s been a while since I’ve been in an actual classroom, let alone in a new country so fingers crossed it all goes well. And hopefully I can start picking up some work soon.

I feel like the longer I’m out of the classroom the harder it will be to get back into things and I don’t want that to happen. I’m hoping for a full-time job but for the start I think doing substitute/supply teaching might be the way to go just so I can get back into the swing of things. Well I’ll let you know how I get on at the teaching agency interview next week!

In other news I recently discovered a UK based website that sells grass-fed/pastured meats and raw milk. Actually they started following me on Twitter and then I jumped onto their website and was like OMG! Seriously that stuff makes me more excited than a new pair of shoes (I’m so not a girly girl)! Anyway I ended up ordering a few things from them, some marrow bones, some beef liver and raw milk… I didn’t order any other meat though since our freezer is already packed full but decided to get some marrow and liver since these are often bits of the animal that people bypass but they are some of the healthiest part of an animal, plus they are usually cheaper than the prime cuts because of the fact that people bypass them. Yesterday it was my dad’s birthday and the week before it was my mum’s. It’s at times like these when it hits me the hardest that I’m away from my family, on the other side of the world. Luckily now we have the technology to help us stay connected pretty easily, but when it comes to life events like birthdays, that’s when not being there in person is the worst!

Anyway don’t worry this isn’t going to be soppy post about how much I miss my family (A LOT)…. instead it’s going to be about FOOD glorious fooooood!!!

Remember when I wrote this post? Well this next recipe is a variation on that. I told you in the original post that it’s a recipe that can be changed up depending on the ingredients you have.

So I decided to make this version to show you how with changing the ingredients around you can have an entirely new dish. Don’t forget also that this recipe and the original both freeze really well so if you wanted to you could make extra and have it ready for later.
