I’ve been on a bit of a celeriac/celery root kick lately. I had never even tasted it, let alone cooked with it until a few weeks ago. I recently just shared this recipe as a guest post over on ‘A Girl Worth Saving’ which also uses roasted celeriac but for this recipe I turned it into a mash. Celeriac is a funny looking vegetable but once you get past the look, the taste is delicious! Falling Off the Paleo Bandwagon and Getting Back On

I’m not going to lie… this whole trip back home to Australia has been like one BIG indulgent treat! I’ve well and truly fallen off the paleo bandwagon and I’m not afraid to admit it. Ok, actually maybe I am a little… I mean I do run a paleo blog and Facebook page after all, but I’m also human and I’ve learnt more about myself on this trip, like the fact that I have a real struggle when it comes to sugar/sweet cravings!

I can’t believe that in 3 days time Joe and I are going to be getting on a plane back home! Honestly it just doesn’t seem real to me! It’s like ahhhhhhhh I just want to scream because I’m so excited but I wish we could just skip over the whole 20+ hour plane trip and the layover and the jetlag etc! Oh but it will be so good to see home again and spend time with family and friends. Anyway now I have a huge smile on my face 😀

Ok so remember when I posted this recipe and said that you could use the leftovers to make something else, well this is the something else that I made! It’s a super simple salad but very tasty!
